Sugar is the generalized name for sweet, short-chain, soluble carbohydrates, many of which are used in food. They are composed of carbon, hydrogen, and oxygen. There are various types of sugar derived from different sources. Simple sugars are called monosaccharides and include glucose (also known as dextrose), fructose, and galactose. The table or granulated sugar most customarily used as food is sucrose, a disaccharide. (In the body, sucrose hydrolyses into fructose and glucose.) Other disaccharides include maltose and lactose. Longer chains of sugars are called oligosaccharides. Chemically-different substances may also have a sweet taste, but are not classified as sugars. Some are used as lower-calorie food substitutes for sugar described as artificial sweeteners.

The orange (specifically, the sweet orange) is the fruit of the citrus species Citrus × sinensis in the family Rutaceae. The fruit of the Citrus × sinensis is considered a sweet orange, whereas the fruit of the Citrus × aurantium is considered a bitter orange. The sweet orange reproduces asexually (apomixis through nucellar embryony); varieties of sweet orange arise through mutations. The orange is a hybrid, between pomelo (Citrus maxima) and mandarin (Citrus reticulata). It has genes that are ~25% pomelo and ~75% mandarin; however, it is not a simple backcrossed BC1 hybrid, but hybridized over multiple generations. The chloroplast genes, and therefore the maternal line, seem to be pomelo. The sweet orange has had its full genome sequenced. Earlier estimates of the percentage of pomelo genes varying from ~50% to 6% have been reported.

Orange juice is the liquid extract of the fruit of the orange tree, made by squeezing the fresh orange. Some commercial orange juice with a long shelf life are made by drying and later re-hydrating the juice, or by concentrating the juice and later adding water to the concentrate. Others are made by pasteurizing the juice and removing oxygen from it, necessitating the later addition of a flavor pack, generally made from orange products. It is known for its health benefits, particularly its high concentration of vitamin C. It comes in several different varieties, including blood orange. In American English, the beverage name may be abbreviated as "OJ".

The actual color of the wine can range from intense violet, typical of young wines, through to brick red for mature wines and brown for older red wines. Cognac (/?k?nj?k/ KON-yak or /?ko?nj?k/ KOHN-yak ; French pronunciation: [k?.?ak]), named after the town of Cognac, France, is a variety of brandy. It is produced in the wine-growing region surrounding the town from which it takes its name, in the French Departements of Charente and Charente-Maritime. For a brandy to bear the name Cognac, an Appellation d'origine contrôlée, its production methods must meet certain legal requirements. In particular, it must be made from specified grapes (see below), of which Ugni blanc, known locally as Saint-Emilion, is the one most widely used. The brandy must be twice distilled in copper pot stills and aged at least two years in French oak barrels from Limousin or Tronçais. Cognac matures in the same way as whiskies and wine when aged in barrels, and most cognacs are aged considerably longer than the minimum legal requirement.

The mandarin orange (Citrus reticulata; Chinese: ??, p júzi; Cantonese: ?, kam? or gam?), also known as the mandarine, is a small citrus tree with fruit resembling other oranges. Mandarins are usually eaten plain or in fruit salads. Specifically reddish-orange mandarin cultivars can be marketed as tangerines, but this is not a botanical classification. Thin, pebbly skin Mandarins are smaller and oblate, rather than spherical like the common oranges (which are a mandarin hybrid). The taste is considered less sour, as well as sweeter and stronger. A ripe mandarin is firm to slightly soft, heavy for its size, and pebbly-skinned. The peel is very thin, with very little bitter white mesocarp, so they are usually easier to peel and to split into segments. Hybrids generally have these traits to a lesser degree. The tree is more drought-tolerant than the fruit. The mandarin is tender and is damaged easily by cold. It can be grown in tropical and subtropical areas. According to molecular studies, the mandarin, the citron, the pomelo, and the papeda were the ancestors of most other commercial citrus varieties, through breeding or natural hybridization; mandarins are therefore all the more important as the only sweet fruit among the parental species.

Ice is water frozen into a solid state. Depending on the presence of impurities such as particles of soil or bubbles of air, it can appear transparent or a more or less opaque bluish-white color. In the Solar System, ice is abundant and occurs naturally from as close to the Sun as Mercury to as far as away the Oort cloud objects. Beyond the Solar System, it occurs as interstellar ice. It is abundant on Earth's surface - particularly in the polar regions and above the snow line - and, as a common form of precipitation and deposition, plays a key role in Earth's water cycle and climate. It falls as snowflakes and hail or occurs as frost, icicles or ice spikes. Ice molecules can exhibit up to sixteen different phases (packing geometries) that depend on temperature and pressure. When water is cooled rapidly (quenching), up to three different types of amorphous ice can form depending on the history of its pressure and temperature. When cooled slowly correlated proton tunneling occurs below 20 K giving rise to macroscopic quantum phenomena. Virtually all the ice on Earth's surface and in its atmosphere is of a hexagonal crystalline structure denoted as ice Ih (spoken as "ice one h") with minute traces of cubic ice denoted as ice Ic. The most common phase transition to ice Ih occurs when liquid water is cooled below 0°C (273.15K, 32°F) at standard atmospheric pressure. It may also be deposited directly by water vapor, as happens in the formation of frost. The transition from ice to water is melting and from ice directly to water vapor is sublimation.

Peel the apples and cut into small cubes. Peel the oranges, take out the pips, and cut into small cubes. Warm the orange juice, the sugar and the mandarin peels until the sugar dissolves. Mix all the ingredients in a pitcher, except the ice and the soda which you add just before serving. Serve in wine glsses.
