Champagne (French: [???.pa?]) is a sparkling wine produced from grapes grown in the Champagne region of France following rules that demand, among other things, secondary fermentation of the wine in the bottle to create carbonation, specific vineyard practices, sourcing of grapes exclusively from specific parcels in the Champagne appellation and specific pressing regimes unique to the region. Some use the term Champagne as a generic term for sparkling wine, but in most countries, it is illegal to officially label any product Champagne unless it both comes from the Champagne region and is produced under the rules of the appellation. Vineyards in the Champagne region of France The primary grapes used in the production of Champagne are black Pinot noir and Pinot Meunier but also white Chardonnay. Champagne appellation law only allows grapes grown according to appellation rules in specifically designated plots within the appellation to be used in the production of Champagne. Royalty became associated with Champagne in the 17th, 18th, and 19th centuries. The leading manufacturers made efforts to associate their Champagnes with nobility and royalty through advertising and packaging, which led to popularity among the emerging middle class.

The wide variety of white wines comes from the large number of varieties, methods of winemaking, and also the ratio of residual sugar. White wine has existed for at least 2500 years. It has accompanied economic development and colonized every country whose inhabitants are wine drinkers: Europe, America, Oceania, although less systematically in Africa and Asia due to climate and religious reasons.

Cognac (/?k?nj?k/ KON-yak or /?ko?nj?k/ KOHN-yak ; French pronunciation: [k?.?ak]), named after the town of Cognac, France, is a variety of brandy. It is produced in the wine-growing region surrounding the town from which it takes its name, in the French Departements of Charente and Charente-Maritime. For a brandy to bear the name Cognac, an Appellation d'origine contrôlée, its production methods must meet certain legal requirements. In particular, it must be made from specified grapes (see below), of which Ugni blanc, known locally as Saint-Emilion, is the one most widely used. The brandy must be twice distilled in copper pot stills and aged at least two years in French oak barrels from Limousin or Tronçais. Cognac matures in the same way as whiskies and wine when aged in barrels, and most cognacs are aged considerably longer than the minimum legal requirement.

Curaçao (/?kj??r?sa?/ KYUR-uh-sao) is a liqueur flavored with the dried peel of the laraha citrus fruit, grown on the island of Curaçao. A non-native plant similar to an orange, the laraha developed from the sweet Valencia orange transplanted by Spanish explorers in 1527. The nutrient-poor soil and arid climate of Curaçao proved unsuitable to Valencia cultivation, resulting in small, bitter fruit of the trees. Although the bitter flesh of the laraha is hardly edible, the peels are aromatic and flavorful, maintaining much of the essence of the Valencia orange. To create the liqueur the laraha peel is dried, bringing out the sweetly fragranced oils. After soaking in a still with alcohol and water for several days, the peel is removed and other spices are added. The liqueur has an orange-like flavor with varying degrees of bitterness. It is naturally colorless, but is often given artificial coloring, most commonly blue or orange, which confers an exotic appearance to cocktails and other mixed drinks. Blue color is achieved by adding a food colorant, most often E133 Brilliant Blue.

Mix the cognac and curacao several hours ahead of time. When ready to serve, pour the necessary amount of this mixture over a block of ice or ice mold in a *cold* punch bowl, and add *thoroughly chilled* champagne. Stir and serve at once, WITHOUT LADLING BACK AND FORTH OVER THE ICE, as this will eliminate the bubbles.
