Irish whiskey (Irish: Fuisce or uisce beatha) is whiskey made on the island of Ireland.
The word "whiskey" is an Anglicisation of uisce beatha or uisge beatha, a phrase from the Goidelic branch of languages (Irish, Scottish Gaelic and Manx) meaning "water of life" (see aqua vitae).
Most Irish pot still whiskey is distilled thrice, while most (but not all) Scotch whisky is distilled twice. Peat is rarely used in the malting process, so that Irish whiskey has a smoother finish as opposed to the smoky, earthy overtones common to some Scotches. There are notable exceptions to these rules in both countries; an example is Connemara peated Irish malt (double distilled) whiskey from the Cooley Distillery in Riverstown, Cooley, County Louth.
Irish whiskey was once the most popular spirit in the world, though a long period of decline from the late 19th century onwards greatly damaged the industry. Although Scotland sustains approximately 105 distilleries, Ireland has only seven in current operation - only four of which have been operating long enough to have products sufficiently aged for current sale on the market as of 2013, and only one of which was operating before 1975. Irish whiskey has seen a great resurgence in popularity since the late twentieth century, and has been the fastest growing spirit in the world every year since 1990. The current growth rate is at roughly 20% per annum, prompting the construction and expansion of a number of distilleries.
Irish cream is a cream liqueur based on Irish whiskey, cream, and other ingredients such as coffee, which can be served on its own, as an alcoholic substitute for milk/cream and sugar in a hot coffee (sometimes with whipped cream added on top), or used in mixed drinks or as part of a shot or a whole shot. Irish cream's largest markets are the United Kingdom, Canada, and the United States.
Irish cream typically has 15 to 20% alcohol by volume (ABV), with a proof level of 30 to 40. The brands of Irish cream include Baileys, Kerrygold, Carolans, Brogans, and Saint Brendan's.
Ice is water frozen into a solid state. Depending on the presence of impurities such as particles of soil or bubbles of air, it can appear transparent or a more or less opaque bluish-white color.
In the Solar System, ice is abundant and occurs naturally from as close to the Sun as Mercury to as far as away the Oort cloud objects. Beyond the Solar System, it occurs as interstellar ice. It is abundant on Earth's surface - particularly in the polar regions and above the snow line - and, as a common form of precipitation and deposition, plays a key role in Earth's water cycle and climate. It falls as snowflakes and hail or occurs as frost, icicles or ice spikes.
Ice molecules can exhibit up to sixteen different phases (packing geometries) that depend on temperature and pressure. When water is cooled rapidly (quenching), up to three different types of amorphous ice can form depending on the history of its pressure and temperature. When cooled slowly correlated proton tunneling occurs below 20 K giving rise to macroscopic quantum phenomena. Virtually all the ice on Earth's surface and in its atmosphere is of a hexagonal crystalline structure denoted as ice Ih (spoken as "ice one h") with minute traces of cubic ice denoted as ice Ic. The most common phase transition to ice Ih occurs when liquid water is cooled below 0°C (273.15K, 32°F) at standard atmospheric pressure. It may also be deposited directly by water vapor, as happens in the formation of frost. The transition from ice to water is melting and from ice directly to water vapor is sublimation.
