Rum is a distilled alcoholic beverage made from sugarcane byproducts, such as molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels.
The majority of the world's rum production occurs in the Caribbean and Latin America. Rum is also produced in Austria, Spain, Australia, New Zealand, Fiji, the Philippines, India, Reunion Island, Mauritius, South Africa, Taiwan, Thailand, Japan, the United States, and Canada.
Rums are produced in various grades. Light rums are commonly used in cocktails, whereas "golden" and "dark" rums were typically consumed straight or neat, on the rocks, or used for cooking, but are now commonly consumed with mixers. Premium rums are also available, made to be consumed either straight or iced.
Cointreau (pronounced: [kw??.t?o]) is a brand of triple sec (an orange-flavoured liqueur) produced in Saint-Barthélemy-d'Anjou, France. It is drunk as an apéritif and digestif,[citation needed] and is a component of several well-known cocktails. It was originally called "Curaçao Blanco Triple Sec".
White port is made from white grapes and can be made in a wide variety of styles, although until recently few shippers have produced anything other than a standard product. Ordinary white ports make an excellent basis for a cocktail while those of greater age are best served chilled on their own. Sweet white port and tonic water is a commonly consumed drink in the Porto region. There are a range of styles of white port, from dry to very sweet. Lagrima, meaning "tears of Christ", is the name for the sweetest style of white Port. When white ports are matured in wood for long periods, the colour darkens, eventually reaching a point where it can be hard to discern (from appearance alone) whether the original wine was red or white.
